Today's recipe is a delicious tenderloin with a fantastic taste and texture.

A prescription to carry out at the weekend and even for the last meal on Christmas Day. It is ready in almost 2 hours and makes 8 servings.

Ingredients

1 kg pork loin in ribs with the appearance of fat

600 g cherry tomatoes (about 3 branches)

6 garlic cloves

1 cup (tea) of white liquor

½ cup (tea) of water

6 sprigs of rosemary

2 sprigs of melgaço

1 ½ tablespoon (soup) of chiming

1 ½ tablespoon (soup) wheat flour

salt and freshly ground black pepper

Preparation method

1- The loin needs to be dry before starting and with some holes in the bottom to better drain the seasoning, being careful not to reach the meat part. Place the tenderloin in a large bowl.

2- Place the rosemary on top of the loin. Season with salt and style.

3- Add the oil and spread the seasoning over all the meat with the holes facing up, quickly place in the fridge and leave for 1 moment until the seasoning is completely used up.

4- Remove the loin from the refrigerator and turn on the oven at a medium temperature.

5- Place the pan on high heat. Once it is simmering, add 1 tablespoon of oil and let it sit for 5 minutes until it softens.

6- Lower the heat until approximately browned everywhere.

7- Turn off the heat and place the loin in a large container to burn later.

8- Peel the garlic, wash the tomatoes and place around the loin along with the rosemary, garlic and bunch of melgaço. Drizzle everything with oil and season the tomato.

9- Place the frying pan over medium heat and let it boil.

10- Afterwards, pour the liquid from the frying pan onto the tray, place it in the oven and leave for 45 minutes until finished cooking.

11- Place the meat, tomatoes and herbs on a platter and leave to rest for 15 minutes, then slice to make the meat juicier.

12- For the sauce, strain the liquid. Afterwards, leave it on low heat in a pan with heat, add the wheat flour and stir until golden.

13- Turn off the heat, stir until everything is broken down, over low heat stir for 3 minutes until the sauce swells.

14- Cut the loin into slices and serve with the sauce and tomatoes.
